Today I just want to talk as a Biryani Lover. Like most of the Indians, I also like biryani like anything. I am not here to give you guys any kind of lecture about the origin or the recipe or any dramatic stories behind the biryani saga. I am also not making any comparison between all kinds of biryanis which we are privileged to taste in our really vast and culinary rich country Because I don’t think it should be compared. I think We are lucky enough that we have so many varieties of biryani to enjoy, isn’t that great?
I think Biryani is like a religion for the Indians, in India people are equally serious about their religion as they are for their city’s biryani. But for me, it’s the taste that is more important.
I myself tried a number of biryanis like Kolkata Biryani (and, yes it served with one big rock of potato), Hyderabadi Biryani, Lucknow Biryani (to be precise from Idrees Biryani), Bangalore Biryani, Delhi style biryani, Bamboo biryani, etc.
Come on, don’t judge. I love to eat and I always try to explore the local food including roadside thelas to famous restaurants.
Coming again on biryani, I will discuss only three types of biryani today.
- As Kolkata biryani served with a piece of mutton or chicken, aloo or potato(which is one of a kind, I know) and an egg with mild gravy mixed fluffy basmati rice it has all kinds of flavors from the gravy oil they put on it before the dum.
- Hyderabadi Biryani has all the taste with the freshness of pudina or mint leaves n dhaniya patta (coriander leaves) and slit green chilies and served with a piece of mutton or chicken and mostly an egg.
- Come to Lucknow ki biryani, it’s more light, flavorful, aromatic. You can simply taste its richness in one bite. It served with a piece of chicken or mutton and no extra perks.
I personally avoid taking any kind of gravies with my biryani so that I can experience the heavenly flavors of the biryani but people enjoy them with many kinds of delicacies. Like, Bengali’s love their Kolkata biryani with chicken/mutton kasha or rezala with a side salad. Hyderabadi’s love their biryani with Mirchi ka salan, raita with some onion carrots, chilies, and salad. Lucknow people love biryani with their mutton korma and a side salad.
Frankly, I love them all till they are flavorful, tasty, scrumptious. I am not a critic, not a chef, and not any big hotshot thing, I am just a foodie who loves her food. It’s my personal opinion based on all that I experienced and taste over the years. Right now, I am so hungry and drooling for biryani while writing this, that I am gonna get up and make myself some biryani right away.
