1. Heat up a pressure cooker, pour butter along with 1 tsp of refined oil to prevent the butter from burning. Add all whole spices let them crackle, then add chopped onion cook till translucent.
  2. Now add chopped ginger and garlic and green chilies, saute for 5 minutes.
  3. Add in tomatoes cook it till the tomatoes become soft and mushy. Now, add turmeric powder, sugar, and salt to taste mix it, cook for another 5 minutes.
  4. Now, add in the mutton pieces and give it a good mix. Cook for 8-10 minutes on medium-high flame and stir occasionally.
  5. After 8-10 minutes, add in carrots and potatoes and mix, cook for another 8 minutes,
  6. then pour 4-5 cups of warm water, stir well and close the lid of the pressure cooker.
  7. Give it approx. 5-8 whistles on medium flame.
  8. Serve hot with steamed rice or enjoy it like a soup.

***Whistles depend on the quality of your mutton it can be less than 5-8 or more than 8 too. Always check before serving.
